This position helps operate a brand new commercial-style kitchen 365 days a year, serving morning and evening, hot meals to 80-100 residents, Staff share responsibilities to oversee, teach, train, encourage, and mentor Culinary Crew Corpsmembers.
- Plan, organize, and assist with preparing, cooking, and serving food to Corpsmembers
- Implement a menu of nutritionally balanced meals, including vegetarian and ethnic dishes
- Follow standard food safety practices, including Serve Safe principles and Hazard Analysis Critical Control Points (HACCP)
- Provide quality food service operations for Corpsmembers; supervise Corpsmembers in training to be Corpsmember Cook Specialists
- Maintain a clean, sanitary and safe working environment and educate Cook Specialists and Corpsmembers in sanitation principles, the proper storage of food preparation/handling
- Assist in implementing a Cook Specialist training program with classroom materials, audio-visual aids, tests, evaluations, and certificates
- Deliver educational material, conduct classes, etc
- Respond to emergencies as needed

Working Conditions Duties will be performed at the brand new CCC Mendocino Center 600 E. Hill Rd. Willits, CA 95490.
Desk space and computer access is afforded within the Kitchen Office. The Cook Specialist may be called upon to make trips to local stores and food vendors. The trips are usually within the County but may sometimes require planned trips out of the area.
